Making Process
The sugar canes which are the raw materials for AJI-NO-MOTOⓇ are grown in these nurtures farm, then brought over as molasses to the factory under very tight quality control.
AJI-NO-MOTOⓇ is made from plant-based raw materials. Sugarcane drops which are transported to the factory will be decomposed first in this process so that they are easily absorbed by microorganisms.
The microorganisms will take the sugar content of molasses and convert it to glutamic acid by fermentation.
The fermentation process to create this “Umami” taste is the same as the fermentation process for making cheese from milk and fermenting soybeans into soy sauce or tempe. Fermentation makes the taste more rich.
The Glutamine Acid will be crystalized. Then will separate the crystal and the liquid.
This acid crystal will be processed into monosodium glutamate which dissolves easily in water and has a stronger “Umami” taste.
Monosodium glutamate will be separated from impurities so that it becomes a purer and safer “Umami” source.
Then after going through the heating process and the second crystallization, white AJI-NO-MOTOⓇ will be obtained as you know.
